- 2 cups fine flour
- 1 tsp baking soda
- 1⁄2 tsp salt
- 150 g butter
- 1 tablespoon sugar
- 1 egg
- 1 yolk
- 2 tablespoon greek yoghurt
- 1 tsp vanilla extract
- 3 bananas
- 1⁄2 tablespoon chocolate chips
- 1⁄2 tablespoon chopped nuts
Preheat the oven to 180°C. Line a baking pan with parchment paper and grease with cooking spray.
In a large bowl, mix together the flour, baking soda and salt.
In another large bowl, stir together the melted butter, sugar, egg and egg yolk, sour cream and vanilla. Add mashed bananas and stir until blended. Gradually add the dry ingredients to the wet ingredients until blended.
Fold in the chocolate chips and nuts and transfer to the prepared loaf pan.
Bake until a toothpick comes out clean, about 1 hour. Let cool for 10 minutes in the pan, then turn out onto a cooling rack to cool completely. Enjoy!
