VIDEORECIPE Traditional Japanese Omurice recipe
Omurice is a traditional Japanese dish consisting of an omelette made with fried rice. It is a popular dish both at home and in Western-style restaurants or izakayas in Japan. It is also popular in many restaurants in South Korea and Taiwan.
- 700 g cooked white rice
- 1⁄2 onion
- 1 carrot
- 2 sausages
- 3 tablespoon yellow corn
- 5 tablespoon soy sauce
- 8 tablespoon mirin
- ground black pepper
- 12 eggs
- dried parsley
Sauce for omurice
- 30 g butter
- 11⁄2 tablespoon Wheat flour
- 5 tablespoon ketchup
- 40 ml soy sauce
- 2 tablespoon sugar
- 2 tablespoon white vinegar
- 360 ml water
Fry the butter together with the wheat flour until the colour is light brown.
Add ketchup, soy sauce, sugar and water. Boil for 5 minutes.
Add vinegar and boil for 5 minutes.
Cut all ingredients into small cubes.
In a wok with oil, fry onion and sausage.
When the onion is cooked, add the carrot and stir-fry.
Add yellow corn and stir-fry.
Add rice and mix well. Fry.
Add ground pepper, mirin and soy sauce. Then, mix.
Put the fried rice in a bowl. Press and then place on plates.
Beat 3 eggs and pass them through a sieve. Transfer to a pre-heated frying pan.
When it is cooked all around, join together with two wooden sticks.
Put the egg omelette on top of the fried rice and put the sauce around the rice. Garnish with dried parsley and enjoy.
