- 1 cup fermented fish sauce
- 10 Eggplants
- 1 mackerel
- 12 cloves garlic
- 8 shallots
- 10 red chillis
- 2 spring onions

1. Step
Put the galangal, lemongrass, kaffir lime leaves, and fish sauce into boiling water and mix. Add the eggplants with a cross cut into them. Cook till soft, then add the mackerel. Once the mackerel is cooked, remove both it and the eggplants from the water.
2. Step
Fry the garlic, shallots, and chillis. Then blend them, adding the mackerel, eggplants, chopped spring onions, coriander, and more fish sauce if needed. In the end, add mint to garnish and enjoy!
