- 1⁄2 cup butter
- 1 cup sugar
- 11⁄2 cups Cake flour
- 1 egg
- 1⁄2 cup buttermilk
- 1⁄2 tsp salt
- 1 tsp baking soda
- 1 tsp vanilla
- 1⁄2 cup hot water
Cream cheese icing
- 8 oz cream cheese
- 21⁄2 cups powdered sugar
- 2 tsp heavy cream
- 3⁄4 tsp vanilla
Cream butter until light and fluffy. Add sugar and beat for another 3 minutes. Add egg and beat until completely combined.
In a separate bowl, sift together flour, salt, baking soda and baking powder.
Add flour mixture to butter mixture. Then, add the buttermilk, vanilla and boiling water and continue to beat until smooth.
Pour batter into the lined cupcake pan. Bake in a preheated oven at 180°C for 25 minutes.
Mix the cream cheese and sugar and add heavy cream and vanilla extract. Mix everything together until fluffy.
Chill in the refrigerator until slightly stiff.
Spread on cooled cupcakes and decorate with your favourite toppings!
