- 1 lb fresh egg noodles
- 340 g chicken breast
- 1⁄3 tsp salt
- 1⁄3 tsp baking soda
- 1⁄2 tbl Chinese cooking wine
- black pepper
- 3 cloves garlic
- 1⁄2 inch ginger
- 4 oz carrot
- 1⁄2 red pepper
- 3 mushrooms
- 4 oz peas
- 11⁄2 tbl soy sauce
- 1 tbl dark soy sauce
- 1 tbl oyster sauce
- 1 tbl hoisin sauce
- 1 tbl Chinese cooking wine
- 1⁄2 tbl pure peanut butter
- 1⁄2 cup water
Cut the chicken breast into thin slices. Marinate with garlic, ginger, salt, Chinese cooking wine, black pepper and baking soda.
Cut into juliennes the carrot and pepper. Slice the mushroom. Slice the spring onions.
In a bowl, combine all the sauce ingredients thoroughly.
Bring a pot of water to a boil and cook the noodles until they are 80% cooked. Drain completely.
Turn the heat up to high and heat your wok until smoking. Mix in the marinated chicken and stir fry for 2 minutes or until it changes colour.
Add all the vegetables except the spring onions. Continue stirring for 1 minute.
Add the well-drained noodles along with the Lo Mein sauce. Continue stirring over medium heat until all the sauce is absorbed. As soon as the sauce runs out, turn off the heat.
Add the spring onions and serve.
