This is a healthy, dairy-free, vegan mashed cauliflower recipe that is quick and easy to make. A very tasty cauliflower puree that can be used as a main dish or as a side dish to accompany meat or fish.

- 1 cauliflower
- 1 leek
- 400 ml water
Slice the leek and separate the cauliflower florets.
In a saucepan, pour a dash of olive oil and fry the onion. Season with salt and pepper and stir.
Add the cauliflower and water. Cover the saucepan and cook until soft.
Mash to a puree texture.
Serve. Garnish with a drizzle of olive oil and croutons. Enjoy.
