- 1⁄4 Cup vegetable oil
- 1 teaspoon vanilla extract

For Frosting:
- 1⁄2 Cup plain greek yogurt
- 1⁄4 Cup peanut butter

Pre-heat the oven to 350 degrees F (175 degrees C). Gently grease a 6-cup ring mould.

Blend the egg, peanut butter, oil, vanilla, and honey in a sizable mixing bowl. Stir in the carrots and thoroughly blend it in. Gradually add the flour and baking soda, ensuring they mix well. Pour the mixture into the prepared ring mould.

Bake the cake in the pre-heated oven for 40 minutes. Leave the cake to cool in the pan for about 10 minutes; then thoroughly cool it on a wire rack.
4. Step
While the cake is cooling, mix the Greek yogurt and 1/4 cup of peanut butter together in a bowl until it becomes well blended. Spread the frosting evenly over the cooled cake.
