Directions

90 min.
1. Step

Start by cutting the pineapple, apples and sugar cane into medium-sized pieces. Remember to remove the seeds from the apple, although some people leave them in to give it a different flavor.

2. Step

Add the water to a large pot and place over medium heat. Add the cinnamon, cloves and piloncillo and let it dissolve.

3. Step

Once the piloncillo is dissolved, add the previously cut fruits. I like to add the hardest ones first, such as sugar cane and tejocotes, so that they soften in time.

4. Step

Then add the tamarind and prunes. The mixture of these two gives it a sweet and sour flavor that contrasts perfectly with the sweetness of the other fruits.

5. Step

Let everything simmer for about an hour, until the fruits are well cooked and the flavors have completely blended.

6. Step

For those who like a touch of alcohol, you can add the rum at this point. Be sure to do this when the fire is already off so that the alcohol does not evaporate.

7. Step

Serve hot. A tip I always do is to put a spoonful of fruit in each cup before pouring the liquid, ensuring that everyone gets a bit of each flavor.

8. Step

If there are children in the house, I always recommend making a separate pot without alcohol. The flavor of the punch alone is already delicious and needs no more.

Champagne and club soda lighten up this deep-red punch made with claret wine, brandy, and dark rum. Fresh orange and pineapple slices add a hint of citrus and bright color. What to buy: Wines labeled “claret” are red wines that contain a blend of Bordeaux grapes. You can find them in most well-stocked wine shops or online.

Pine Cone Punch

Inspired by the idea of making a camping cocktail, we thought it’d be novel to use a little pine liqueur to bring the taste of the great outdoors to the canteen. We found the punchy, herbal liqueur a little tricky to mix with, but ultimately we were able to balance it out with some dark rum and a little pineapple juice. This recipe is scaled to fit into a canteen, and serves four.
