- 4 egg whites
- 80 g sugar
- 350 g chocolate
- 270 ml heavy cream
Put some water in the pan and heat it up. When it starts to steam, lower the heat to the minimum and place the bowl with the egg whites and sugar on top.
Cook the egg whites until the sugar dissolves.
Remove the bowl from the heat and melt the chocolate. Put the chocolate in a bowl and add the cream. Whip the Swiss meringue. It is ready when the meringue has peaks and is stable.
Mix the chocolate and cream with a silicone spatula until both ingredients are emulsified.
Mix the chocolate cream with the Swiss meringue. Put the meringue into the chocolate little by little, in batches with wrapping movements from the centre to the sides.
Serve the mousse and top it with swiss meringue and fruits. Enjoy!
