- 75 g toasted almonds
- 1⁄4 egg whites
- 40 g honey
- 40 g sugar
Separate the egg white from the egg yolk and reserve a quarter of the egg white in a bowl. Whip the quarter of the egg white with the wire whisk.
Put a saucepan on the heat and add the sugar and honey. Heat, stirring constantly, until smooth. Gently fold the honey into the bowl of egg white, stirring constantly.
Return the mixture to the saucepan and heat over low heat, stirring constantly until a more solid, elastic texture is obtained. Remove from the heat and add the almonds. Stir.
Fill a baking tin on baking paper with the mixture and press it into a compact form. Leave to cool.
Serve the nougat for Christmas.
