- 60 g oat flakes
- 75 g walnut pieces
- 75 g almond flakes
- 70 g coconut
- 65 g monk fruit
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 2 egg whites
Toast the oats for 10 minutes in the oven.
Toast the walnuts and slivered almonds and coconut for 5 to 10 minutes.
Pour the oats, walnuts, almonds and coconut into a bowl. Add the cinnamon and salt and stir.
Beat the egg whites lightly, add the Monk's Fruit a little at a time and finally the vanilla.
Mix the egg whites with the oat mixture and fold in until all the mixture is moistened.
Line a baking sheet with baking paper and form 12 biscuits with the help of a cookie scoop. Place a whole almond in the centre of each biscuit and bake in a preheated oven at 180°C for 20 minutes or until golden brown on top and bottom.
Take out, leave to cool and enjoy!
