- 2 cups cooked brown rice
- 200 g chicken breasts
- 100 g green asparagus
- 100 g cherry tomatoes
- 50 g corn
- 2 tablespoon mayonnaise
- 2 tablespoon Extra Virgin Olive Oil
- 1 tablespoon vinegar
- 1 pinch cumin
Remove the stalks from the wild asparagus and cook them for 5 minutes in a pan with plenty of hot water.
Remove the pan from the heat and leave it to cool. Chop the asparagus, dice the chicken and halve the cherry tomatoes.
To make the vinaigrette, mix the mayonnaise with extra virgin olive oil and vinegar. Stir well and finally add a dash of cumin to taste. Mix well.
To assemble the salad, prepare a base with brown rice and add the chicken, corn and cherry tomatoes. Stir to mix all the ingredients together.
Serve with the vinaigrette. Enjoy!
