- 170 g butter
- 150 g light brown sugar
- 7 prunes
- 200 g crystal sugar
- 2 egg
- 1 tsp vanilla essence
- 190 g All Purpose Flour
- 2 teaspoons baking soda
- 1 tsp salt
- 120 ml buttermilk
Halve and pit the plums. Place them cut side down and cut them into slices.
Heat oven to 180°C. In a baking pan melt 60 g of butter and add the light-brown sugar over low heat. Mix until smooth and remove from heat.
Place the plum slices into the baking pan, arranging them in concentric circles.
Mix the butter with the granulated sugar. Beat the egg yolks with vanilla and incorporate them into the butter mixture; set aside the egg whites for later.
Mix the flour, baking powder and salt, and measure the buttercream. Gradually sift in the flour mixture, alternating with buttercream. Mix until combined.
Whisk the egg whites until soft peaks form; stir one-third of the egg whites into the batter. Then, gently fold in the rest of the egg whites until incorporated.
Pour the batter over the plums, spreading to cover evenly. Bake in a preheated oven for 50 to 60 minutes until the top is browned.
Let the cake cool in the skillet for at least 30 minutes. Then turn out the cake onto a serving plate and let cool completely before serving.
