- 250 g plain white flour
- 1⁄2 tsp salt
- 100 g unsalted butter
- 125 ml boiling water
- 200 g mincemeat pie filling
Rub some of the butter into the flour using your fingertips. Add more butter and rub that in.
Stir in half of the water. Take the pastry out of the bowl and knead it. Wrap it in cling film and place it in the fridge for 30 minutes.
Roll out the pastry thinly and cut out the bases and lids. Press each pastry base into the dents in the tin. Then, spoon in the mincemeat filling.
Close the mince pies with the lids by pressing them down onto the base. Brush with egg wash all over the top and bake for 30 minutes or until golden.
Remove from the oven, place on a cooling rack, sprinkle with caster sugar and enjoy!
