Simple Homemade Quick & Easy Egg and Lettuce Sandwiches

These Egg and Lettuce Sandwiches are a classic, simple, and healthy light meal option. Packed with protein, these sandwiches are perfect for a quick lunch or snack.   • 4 tbls mayonnaise Added to

1. Step

Start by boiling the eggs. Place them in a saucepan, cover with water and bring to a boil. Boil for about 9-12 minutes. Once done, peel and chop the eggs.

2. Step

Rinse the lettuce in cold water and pat dry. Tear it into small pieces.

3. Step

In a bowl, combine the chopped eggs and lettuce. Add mayonnaise, mustard (if using), salt and pepper. Mix everything together until well combined.

4. Step

Spread butter on one side of each bread slice, then spread the egg and lettuce mixture on half of the slices.

5. Step

Cover with the remaining slices, butter side down, pressing gently.

6. Step

Cut each sandwich into your preferred shape, either halves, quarters or triangles.

7. Step

Serve immediately or wrap in cling film for a later meal.
