- 2 tbl yeast
- 2 tbl water
- 1 tbl bread flour
- 4 cups bread flour
- 11⁄2 cup water
- 1 tsp salt
Mix the levain ingredients and let rise, covered for 3 hours at room temperature.
Add flour and water to the levain. Mix well, cover and let rest for 90 minutes.
Add salt, knead for at least 2 minutes and let sit for another 30 minutes.
Fold the dough and let sit for another 30 minutes. Repeat this four times. Then let rise in the refrigerator for 8-16 hours.
Preheat oven to 230 C. Make 4 loves from the dough. Transfer to trays lined with parchment paper and dusted with flour. Proof for 30 minutes, then bake for 20-25 minutes. Let cool and enjoy!
