- 2 cups chopped onion
- 4 celery ribs
- 13 cloves garlic
- 8 cups boneless skinless chicken thighs
- 2 cans diced green chillis
- 6 cans navy northern beans
- 6 cups chicken stock cube
- 2 cans water
- 2 tablespoon cumin
- 2 tablespoon dried oregano
- 1 tsp cayenne pepper
- olive oil
- black pepper
Heat two tbsp of olive oil in a skillet on medium heat. Chop up your celery, mince the garlic, and add both along with the chopped onions to the skillet. Saute for about eight minutes, then set aside.
Now cut up your chicken thighs, and put that in the skillet. Add green chillies, and season with salt and pepper. Cook until the meat is no longer pink.
In a large pot, add your beans, chicken broth, cumin, oregano, cayenne pepper, and water. Then add the sauteed vegetables and cooked chicken. Stir well and bring to a boil. Then lower the heat and let simmer for 45 minutes.
Garnish with sour cream, avocado, cilantro, and cheese, and serve with tortilla chips. Enjoy!
