- 5 g red curry paste
- 25 g panang curry paste
- 250 ml coconut milk
- 45 g Roasted peanuts
- 14 g erythritol
- 1⁄2 tablespoon lime juice
- 2 tablespoon olive oil
Pulse your roasted peanuts into crumbs. On medium heat, pour olive oil onto a pan and add panang and red curry paste. Stir while sauteing for 2 minutes.
Add coconut milk and mix. After 2 minutes, add the peanuts, erythritol, and lime juice. Mix well and season according to taste. Bring to boil, then turn off the heat.
Serve, for example as a dipping sauce or salad dressing. Enjoy!
