- 2 eggs
- 11⁄3 cups sugar
- 2 tsp vanilla extract
- 3 cups grated zucchini
- 3⁄4 cup unsalted butter
- 23⁄4 cups All Purpose Flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp ground ginger
- 1⁄2 tsp nutmeg
- 1⁄4 tsp Kosher salt
- 1 cup walnuts
- 1 cup raisins or dried cranberries
In a large bowl, beat the eggs. Mix in the sugar and vanilla extract. Stir in the grated zucchini and the melted butter.
In a separate bowl, mix together the flour, baking soda, baking powder, cinnamon, ground ginger, nutmeg, and salt.
Stir these dry ingredients into the zucchini mixture. Stir in walnuts, raisins or cranberries.
Coat each muffin cup in your muffin pan with a little butter or vegetable oil spray. Use a spoon to distribute the muffin dough equally among the cups, filling the cups up completely.
Bake in a preheated oven to 175°C for 30 minutes. Set on a wire rack to cool for 5 minutes. Remove muffins from the tin and let cool for another 20 minutes.
