- 200 g Leicester cheese
- 50 g parmesan
- 1 tsp turmeric
- 1⁄2 tsp smoked paprika
- 3⁄4 cup corn flour
- 1⁄3 cup white rice flour
- 11⁄2 tsp baking soda
- sunflower oil
- 4 tsp salt
- 350 ml water
In a frying pan place the grated Leicester cheese. Stir until melted and cook until the oil starts to split. Then scoop the melted cheese into a bowl of iced water.
Remove it from the bowl and remove the excess liquid. Finely chop and place on a baking tray lined with baking paper. Repeat the process with parmesan.
Place cheese in the preheated oven to 60° C for 4 hours, then remove and cool completely. Then, put it in a blender until obtaining fine powder.
Add the salt, turmeric and smoked paprika. Blend until ingredients are combined. Store in an airtight container.
In a small saucepan put the water and bring to a simmer. Gradually add ½ cup corn flour and the rice flour. Cook for 3-4 minutes on low heat, stirring until the mixture dries out and is still sticky.
Place the cooled mixture in a food processor with the remaining corn flour, baking powder and 2 tsp salt. Blend until obtaining a dough.
Form small twisty shapes with the dough. Then, place them in a baking pan sprinkled with corn flour.
In a saucepan, add oil and heat to 170° C. Fry the Twisties for 1:30 minutes, drain the oil excess. Then, place the Twisties on a baking tray and bake at 60° c in the oven for 6 hours.
Coat Twisties with the cheese powder mixture. Store or enjoy!
