Directions

120 min.
1. Step

To make the apple tiramisu, start by preparing the apples. Peel, core and cut them into small cubes. Melt the sugar in a pan and add the diced apples. Deglaze with the lemon juice and simmer briefly until the apples are soft.

2. Step

While the apples are cooling, separate the eggs. Beat the egg yolks with the powdered sugar until frothy. I recommend placing the bowl in a hot water bath to make the mixture extra creamy.

3. Step

Now fold the mascarpone into the egg yolk and sugar mixture until everything is well combined. Beat the egg whites with a pinch of salt until stiff and fold into the mascarpone cream.

4. Step

Layer the ladyfingers in a baking dish, spread the cooled apples on top and cover with the mascarpone cream. Repeat this step until all the ingredients have been used.

5. Step

Finally, dust the apple tiramisu with cocoa. We recommend using a fine sieve to achieve an even dusting of cocoa powder.

6. Step

Place the apple tiramisu in the fridge for at least an hour so that it can infuse properly. Serve it cold.
