Swiss rolls are just amazing! If you are a sweet tooth try this easy recipe to prepare a homemade version, fluffy and tasty like never before!
- 75 g potato starch
- 150 g sugar
- 75 g flour g baking powder
- 2 eggs
- 1 tsp vanilla essence
- 50 ml milk
- pinch salt
- 450 g strawberries
- 40 ml lemon juice
- 40 g sugar
- 2 sheets gelatin
- 500 ml fresh whipping cream
- 50 g vanilla powdered sugar
- chocolate flakes
Divide the egg yolks from the egg whites into two separate bowls. Beat the egg whites until stiff with a pinch of salt.
In another bowl, whisk the yolks with the sugar. Pour in the milk and mix for 5 minutes until the mixture is clear and frothy.
Add the sifted potato starch, flour and baking powder. Knead for 5 minutes with the mixer. Also add the vanilla essence and mix with a spatula.
Add the stiffly beaten egg whites and mix gently with a spatula from the bottom up, keeping the bowl slightly tilted, until completely absorbed.
Spread the batter evenly on a baking sheet lined with parchment paper with the help of a spatula and bake in a preheated oven at 180° C.
Remove the cookie dough from the oven, let it cool at room temperature for 3-4 minutes, then roll it on itself with all the baking paper, cover it with a cloth to retain moisture and let it rest for 30 minutes at room temperature.
Wash the strawberries and cut them into pieces, then place them in a bowl with 40 gr of sugar and 40 ml of lemon juice, mix well, then mix with all its syrup and transfer the mixture obtained in a saucepan. Bring to the fire and, as soon as it boils, cook the strawberry sauce for 10 minutes, stirring frequently.
Soak the gelatin sheets in a bowl of cold water for 10 minutes.
Remove the sauce from the heat and let it cool at room temperature for 4 minutes, then squeeze out the gelatin sheets and pour them into the sauce, stir well to melt them.
Transfer the strawberry mousse to a pitcher, then take your roll and unroll it. Then pour a layer of strawberry cream on the roll, spreading it evenly over the entire surface.
Prepare the whipped cream by pouring cold cream into a bowl and begin to whip. Add the powdered sugar and continue to whip to the perfect density.
Spread a layer of whipped cream over the surface of the cookie dough, leaving a little aside to cover and level with the spatula.
Roll the piece and trim the edges by cutting them with a knife.
To the whipped cream that you have set aside, add a little strawberry sauce, mix and, with the help of a spatula, completely cover the piece.
To finish the decoration, you can add some chocolate chips. Place your Swiss roll in the refrigerator for about 4 hours before serving. Enjoy
