  • 200 g sirloin or rump steak Added to
  • 400 g corn flour Added to
  • 12 tsp salt Added to
  • 12 tsp black pepper Added to
  • ginger Added to
  • 3 cloves garlic Added to
  • 2 fresh bird’s-eye chillies Added to
  • a handful coriander Added to
  • vegetable oil Added to

Marinade

  • 1 tsp sesame oil Added to
  • a pinch granulated sugar Added to
  • 2 tablespoon light soy sauce Added to
  • 1 egg Added to

Sauce

  • 12 tablespoon dark soy sauce Added to
  • 3 tablespoon tomato ketchup Added to
  • 6 tablespoon Chinkiang black rice vinegar Added to
  • 4 tablespoon honey Added to

Directions

1. Step

Peel and finely dice the ginger and garlic. Slice the chillies into thin rings and place everything together in the same bowl.

2. Step

Remove the coriander leaves and then finely chop the coriander stalks. Then, add them to the bowl.

3. Step

In a separate bowl, mix all the sauce ingredients together.

4. Step

Cut the meat into thin strips and place them in a mixing bowl. Add the marinade ingredients and coat the meat.

5. Step

Set up a large mixing bowl with cornflour seasoned with salt and pepper and add the marinated beef. Rub flour into the meat until fully coated.

6. Step

Remove the flour excess and fry in hot oil until golden brown for 3 minutes. If you want, you can double-fry it.

7. Step

Remove the pieces carefully with a slotted spoon and drain well on a plate covered with kitchen paper.

8. Step

In a clean wok, heat a dash of vegetable oil over high heat. Add the ginger, garlic, chilli, and coriander, lower the heat to medium and stir-fry for 30 seconds until fragrant.

9. Step

Pour over the sauce mixture and bring to a vigorous boil, then add the crispy meat and give the wok two or three tosses to mix everything together.

10. Step

Spoon into a serving bowl. Serve and enjoy!
