Smoked Paprika Aioli
- 1 clove garlic
- 1 egg
- 1⁄4 Cup mayonnaise
- 2 tablespoon tomato paste
- 1 tablespoon fresh lemon juice
- 1 tablespoon Fresh parsley
- 1⁄2 spoon smoked paprika
- 1⁄2 spoon salt
- 1⁄4 spoon freshly ground black pepper
- extra virgin olive oil
Preheat the oven to 450°F. After the oven has reached temperature, insert a rimmed baking sheet to warm up.
Cut the Fingerling potatoes in half lengthwise into wedges. In a bowl, combine potatoes, extra virgin olive oil, salt and pepper and toss well to coat the potatoes.
Remove the warm pan from the oven and arrange the potatoes cut-side down on it. Then, place it back in the oven and roast until the potatoes are tender, approximately 40 minutes.
In the bowl of a food processor combine the garlic, egg, mayonnaise, tomato paste, lemon juice, parsley, smoked paprika, salt and pepper. With the motor running, slowly drizzle the olive oil and continue to process until the mixture forms a thick emulsion. Transfer to a serving bowl.
Remove the potatoes from the oven and drizzle them with olive oil and transfer them to a serving platter. Serve with aioli on the side. Enjoy!
