- 450 g eggplant
- 1⁄2 cup All Purpose Flour
- 2 cups panko bread crumbs
- 2 egg
- 1⁄2 tsp salt
- 1⁄2 tsp ground black pepper
- 1⁄2 tsp garlic powder
Put the flour, eggs, and bread crumbs in separate bowls. To the eggs, add salt, black pepper, and garlic powder. Cut your eggplant into long pieces.
Cover the eggplant pieces first in flour, then the egg mixture, then the bread crumbs. Heat up your oil, and start frying the covered eggplant until it's golden brown on each side. Serve with sauce or dressing of your choice, and enjoy!
