- 100 g butter
- 60 g dark chocolate
- 90 g brown sugar
- 1⁄4 tsp vanilla extract
- 80 g Desiccated Coconut
- 50 g self-raising flour
- 75 g fine flour
- 1 egg
- 8 g coconut
- 100 g icing sugar
- 8 g cocoa powder
- 20 ml milk
- 5 g butter
Grease a 20 cm square cake pan. Line with baking paper, extending the paper up the sides of the pan.
Melt butter and chocolate in a medium saucepan over low heat, stirring occasionally. When the mixture is smooth, remove from heat and stir in brown sugar and vanilla.
Add coconut and flours and stir to combine. Add egg.
Mix well and press mixture into prepared pan. Bake for about 20-24 minutes until is cooked.
Remove from oven and spread with chocolate icing while slice is still hot. Sprinkle with extra coconut.
Allow slice to cool in the tin. When cooled, cut the slice into squares and enjoy!
