- 2 cups rye flour
- 12⁄3 cups bread flour
- 11⁄2 cups hot water
- 2 tablespoon molasses
- 1 tablespoon cocoa powder
- 1 tablespoon caraway seeds
- 2 teaspoon salt
- 2 teaspoon vegetable oil
Add yeast to water and let proof. Mix dry ingredients together, then add the yeast and molasses. Stir with a spatula till the dough comes together, then let your mixer knead it on slow speed for around 8 minutes. Then add vegetable oil and continue kneading for 2 more minutes.
Put the dough on a flour-dusted surface and shape it into a ball. Put it on a tray, cover with a towel and let rise for 90 minutes. Leave it on a warm countertop or in the oven.
Afterwards, lightly flour the dough, punch it down and reshape it. Let it rise for another 45 minutes.
Now mould your dough into a bread shape and cut the top. Fill a baking dish half full with water and place it in the bottom of your oven. Heat oven to 425 degrees Fahrenheit, and bake your bread for 30 minutes.
Reduce heat to 350 degrees and bake for another 30 minutes. Then let cool, and serve with strong meats or cheeses. Enjoy!
