Ingredients

  • 1 kg veal Added to
  • 200 g red beans Added to
  • 4 potatoes Added to
  • 3 carrots Added to
  • 1 onion Added to
  • 1 l Beef Stock Added to
  • 2 cloves garlic Added to
  • 2 bay leaves Added to
  • 1 red chilli Added to
  • 1 tablespoon tomato concentrate Added to
  • Wheat flour Added to
  • Extra Virgin Olive Oil Added to
  • black pepper Added to
  • salt Added to

Directions

1. Step

Soak the red kidney beans the night before.

2. Step

Remove the outer fat from the veal and cut it into cubes of about 1.5 cm in size.

3. Step

Season to taste with salt and pepper and dredge the cubes in flour. Remove the excess.

4. Step

In a pan, pour a drizzle of extra virgin olive oil.

5. Step

Lightly brown all the pieces of veal.

6. Step

Peel and finely chop an onion, a couple of cloves of garlic and a chilli or red pepper.

7. Step

Peel and dice 3 carrots. Dice the potatoes into 1 cm cubes. Add a drizzle of extra virgin olive oil. Add the garlic together with the chilli, and then the chopped onion. Season lightly with salt and stir.

8. Step

Add a splash of meat stock and the tomato concentrate. Mix. Add the carrot, stir and then add all the meat.

9. Step

Add the red beans that have been soaking overnight.

10. Step

Add 1 litre of meat stock. Stir. Add two bay leaves. Cover and leave to cook over a low heat for 2 hours.

11. Step

Add the potatoes and cook over a low heat for a further 30 minutes
