1. Step
First, preheat the oven to 180°C.
2. Step
Continue mixing the eggs with the sweetener in a bowl until a homogeneous mixture is obtained.
3. Step
Add the grated carrot, yogurt, ground almonds, juice with orange zest, baking powder, cinnamon and vanilla essence.
4. Step
Pour the mixture into a greased baking dish.
5. Step
Bake for about 45 minutes until golden brown and a toothpick inserted in the center comes out dry-remember that each oven is different, so baking time may vary.
6. Step
Once ready, let the cake cool before unmolding.
