- 2 ripe bananas
- 1⁄2 cup brown sugar
- 1⁄2 cup All Purpose Flour
- 1⁄2 cup rice flour
- 1⁄2 cup Desiccated Coconut
- 1⁄4 tsp baking soda
- 1⁄2 tsp cinnamon powder
- 1 pinch salt
- 1⁄3 cup milk
- Powder sugar
To prepare the fritters, place the bananas in a bowl and mash them with a fork until they form a smooth paste. Then add the brown sugar and whisk well until the sugar dissolves completely.
Combine the all-purpose flour, rice flour, desiccated coconut, cinnamon powder, baking powder, salt, and milk with the mashed bananas and mix until fully combined, forming a thick paste.
Heat a deep pan over medium heat, adding enough oil to deep fry the fritters. When the oil is sufficiently hot, drop spoonfuls of the mixture into the pan, adding as much as possible.
Fry until the fritters are golden brown, then remove them from the oil and place them on a paper towel to absorb any excess oil.
Sprinkle with powdered sugar, and the fritters are now ready to be enjoyed while still hot and crispy.
