- 200 g feta
- 500 g cherry tomatoes
- 1 tsp Chilli flakes
- 4 cloves garlic
- salt and pepper
- 400 g pasta
- fresh basil
- 1⁄2 cup olive oil
Add feta cheese and tomatoes and top with olive oil, salt, pepper, and chilli flakes in a baking dish. Bake in the centre of a preheated oven at 220°C for 30 minutes or until the cheese is melted and the tomatoes start to burst.
Cook the pasta and reserve 1 cup of pasta water.
Remove feta from the oven, add garlic and mix with a stirring stick to help break up the tomatoes and mix everything together. Then, add the pasta and the reserved water pasta. Stir.
Add basil and Parmesan cheese before serving. Enjoy!
