- 3 large apple
- 3 egg
- 125 g plain Greek yoghurt
- 125 g EVOO or sunflower oil
- 220 g pastry flour
- 200 g sugar
- 16 g baking soda
- Lemon zest and juice
- Apple jam
Grate the lemon peel.
Peel the large apples, core them and cut them in half. In turn, cut each half in half to slice it.
Put the apples in a bowl and squeeze the juice of half a lemon. Use two apples for the filling and one for decoration. Cut the apple for decoration into larger slices, put them in another bowl and add the juice of the other half lemon.
Break the eggs and add them to the mixer bowl. Add the sugar and beat until the dough whitens and doubles in volume.
Add the plain Greek yoghurt, the lemon zest and the oil. Beat for a few seconds until all the ingredients are well blended.
Place the baking flour in a bowl, add the baking powder and mix well. Add the flour to the dough and sieve it. Mix until the dough perfectly incorporates the flour. Add the apple filling and mix well.
Line the bottom of a baking tin with baking paper and spray the sides with release spray. Pour the sponge cake batter into the mould and spread it well. Decorate the surface with the reserved apple.
Bake in a preheated oven at 180 ºC for approximately 60 minutes. Remove from the oven and brush with apricot, peach or apple jam. Leave to cool for 10 minutes and remove from the mould.
Leave the apple cake to cool completely on a wire rack. Ideally, it should be eaten the next day, as it will be much tastier. Serve and enjoy at tea time!
