- 4 egg
- 130 g sugar
- 150 ml water
- 100 ml milk
- 125 ml Sunflower seed oil
- 200 g gluten free bread flour
- 50 g potato starch
- 100 g Cake flour
- 2 tablespoon rice flour
- 1 sachet baking powder
- 50 g chocolate flakes
- 50 g Candied orange
- Lemon zest
In a bowl, crack the eggs, add the sugar and whisk for 5 minutes.
Incorporate the oil, water, milk and grated lemon zest.
Add the flour a little at a time and add the baking powder.
Add two tbsp of rice flour to the dough and top with the chocolate flakes and diced candied. Mix with the spatula from the bottom to top
Pour the dough into a 750 g panettone (Italian Christmas cake) mould. Then, place it on a baking tray and bake for 45 minutes at 180°C.
After 45 minutes, do the toothpick test to check doneness. If it is dry, turn it off and let it rest in the oven, turned off and closed, for 5 minutes.
Remove from the oven and leave to cool on a rack. If desired, sprinkle icing sugar. Enjoy!
