Healthy spinach recipes (including what goes well with spinach)
- 50 g couscous
- 1 pumpkin
- 100 g spinach
- 1 leek
- 50 g feta
- 2 tablespoon olive oil
- 2 tablespoon lemon juice
- white ground pepper
Wash and halve the pumpkin. Bring it with the couscous to a boil and simmer over low heat for 7 minutes. Season lightly with salt.
Deseed the pumpkin and cut it into larger cubes.
Wash the spinach and leek and cut them into smaller pieces.
Whisk together the lemon juice, salt, pepper, a pinch of sugar and olive oil.
Mix the pumpkin, spinach, leek, couscous and feta cheese in a bowl with the sauce. Leave to rest for 15 minutes and season again if necessary.
Serve the finished couscous salad with Hokkaido pumpkin and feta cheese with flaxseeds or sesame seeds.
