- 100 ml vegetable oil
- 250 g Flathead Fillets
- 35 g salt
- 30 g pepper
- 128 g corn flour
- 30 ml milk
- 1 lemon
- 35 g coriander for decoration
- 2 green chillies
- 30 ml water
Cut the crusts off the bread and dice the slices. Then, form fine breadcrumbs.
Portion the flathead fillets into strips. Lightly dust them with cornflour and place them into an egg wash and then into the breadcrumbs.
Pour the vegetable oil into a pan and preheat on medium heat. Add the flathead fillets until they begin to crisp. Then, place them on a paper towel to drain the excess oil.
Serve the flathead fillets and finish with a lemon wedge on the side of the plate.
