Lemon curd is a classic of British Pastry. Is worldly known as the lemon pie filling, but it is perfect for other desserts like eclairs, scones, and sponge cake, among others. It has the perfect balance between sweet and sour flavours.
- 2 lemons
- 2 egg
- 15 g maize starch
- 100 g sugar
- 40 g butter
In a saucepan, mix the juice and zest of two lemons and wait until it is hot. Then remove from the heat and let it cool down.
In a bowl, whisk the eggs and the sugar. After, add the cornstarch and whisk until no lumps remain.
Add the juice-zest. Then, pour through a sieve, making sure to strain it completely.
Put the preparation again in a saucepan and whisk until the cream is thick.
Next, remove it from the stove and add the butter, whisk until it dissolves.
Serve the lemon curd in cups or the recipient's preferred and allow it to cool.
Finally, enjoy your lemon curd! You can use it immediately or save it in the fridge until two weeks.
