In a saucepan, mix the juice and zest of two lemons and wait until it is hot. Then remove from the heat and let it cool down.

In a bowl, whisk the eggs and the sugar. After, add the cornstarch and whisk until no lumps remain.

Add the juice-zest. Then, pour through a sieve, making sure to strain it completely.

Put the preparation again in a saucepan and whisk until the cream is thick.

Next, remove it from the stove and add the butter, whisk until it dissolves.
