- 4 peaches
- 200 g sugar
- 75 g powdered sugar
- 200 g raspberries
- 1 vanilla pod
- 3 tablespoon lemon juice
- 1 l water
- vanilla ice cream
- slices almonds
- Chantilly or whipped cream
Bring a pot of water to a boil. then, add the peaches for 1 minute. Plunge the peaches in the ice bath immediately.
Dry and peel the peaches.
In a large pot, add the water, sugar, and vanilla pod. Mix while bringing to a boil.
Reduce to low heat and add the peaches. Poach them for 10 minutes and set them aside.
Blend together the raspberries, powdered sugar, and lemon juice until obtaining a smooth texture. Pour the mix into a jar or bowl using a sieve.
Cut each peach in half and remove the pit. Then, cut the peaches in quarters.
In a glass container or bowl, add a couple of quarters of peaches, a scoop or two of vanilla ice cream, and another quarter of peach, and then pour raspberry coulis to cover everything. Enjoy!
