Directions

1. Step

Rinse the soaked beans and place them in a pot. Cover the beans with water to an excess. Add two tablespoons of fat, the chopped onion and salt. Cook for about an hour until tender.

2. Step

Heat the other two tablespoons of fat in a large frying pan and add the finely chopped onion. Cook until it begins to brown and add the garlic. Cook for about two minutes.

3. Step

Add one-third of the beans with their liquid to the pan and start grinding them. Mash and add a third more. Repeat and add the rest of the beans.

4. Step

Mash all the beans and stir constantly as they simmer gently.

5. Step

Turn off the heat when they are done. If they are too thick, add a little water to thin them out.
