- 2 tsp potato starch
- 1 tablespoon water
- 1⁄2 cup bean sprouts
- 1⁄2 cup Chinese chives
- 1⁄3 cup shrimps
- 1⁄3 cup Chinese BBQ pork
- 1⁄4 tsp salt

1. Step
Add salt to the shrimp and let sit for 5 minutes. Cook the bean sprouts and shrimp together for a few minutes, then drain and set aside. Beat your eggs. Add potato starch dissolved in water to the eggs. Add the rest of the ingredients.
2. Step
Heat a pan with a tsp of oil on low heat. Pour in the omelette mixture and cook for about 2 minutes before carefully flipping. Cook for another two minutes. Serve plain, with sauce, or with rice.
