This hearty and nutritious vegetable stew is packed with a variety of colorful veggies, simmered in a flavorful broth. It is a perfect food that is not only delicious but also easy to prepare.

  • 1 yellow squash, diced Added to
  • 1 Cup green beans, trimmed and cut into bite-sized pieces Added to
  • 1 can diced tomatoes Added to
  • 4 cups vegetable broth Added to
  • 1 teaspoon dried thyme Added to
  • 1 teaspoon Dried Rosemary Added to
  • teaspoon paprika Added to
  • Salt and pepper, to taste Added to
  • Fresh parsley, chopped (for garnish) Added to

1. Step

Heat the oil in a pot or Dutch oven over medium heat.

2. Step

Add the chopped onion and minced garlic to the pot, sautéing until they become translucent and fragrant.

3. Step

Add the diced carrots, celery, red bell pepper, zucchini, yellow squash, and green beans to the pot. Sauté for about 5 minutes, stirring.

4. Step

Pour in the diced tomato and their juices, followed by the vegetable broth.

Season the stew with dried thyme, rosemary, paprika, salt, and pepper. Stir well to combine.

6. Step

Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about 15-20 minutes, or until the vegetables are tender.

Taste and adjust the seasoning. Once cooked, ladle the vegetable stew into serving bowls. Sprinkle fresh chopped parsley on top for a burst of added flavor.

Serve the vegetable stew hot and enjoy!
