Falafel Lavash Wraps
For these lavash wraps, falafel combines with tomato, cucumber, onion, and hummus, with a tahini-lemon dressing. Game plan: Make a batch of Classic Falafel before you begin.
- 6 tbl tahini
- juice of 2 lemons
- 1 large garlic clove, minced
- Kosher salt
- 1⁄4 cup olive oil
- 1 recipe classic falafel
- 1⁄2 english cucumber, diced
- 1 ripe red tomato, stemmed and diced
- 1⁄4 red onion, thinly sliced
- 1⁄4 cup chopped fresh flat-leaf parsley
- 1⁄2 tsp sumac
- 1 cup hummus
- 5 pc lavash bread
Prepare the falafel as directed.
To make the dressing, put the tahini, lemon juice, garlic, and a pinch of salt into an airtight jar; close the jar and shake vigorously. Add the olive oil and shake again. Thin with water until pourable, if necessary. Set aside.
In a bowl, toss together the cucumber, tomato, red onion, and parsley. Season with the sumac and a little salt.
To make the wraps, toast the lavash in a large frying pan. For each wrap, layer hummus, the cucumber mixture, and 3 pieces falafel. Drizzle with some of the harissa and tahini dressing. Roll up burrito-style and serve.
