  • 1 tablespoon red curry Paste or Laksa Curry Paste Added to
  • 600 ml vegetable stock Added to
  • 1 can coconut milk Added to
  • 1 teaspoon turmeric Added to
  • 1 list Blended nori Added to
  • 1 teaspoon chili oil Added to
  • 1 teaspoon Sou Sauce Added to
  • 1 tablespoon Nut butter Added to
  • 2 teaspoon brown sugar Added to

Noodles

  • 1 pack Noodles Added to
  • 12 Block firm tofu Added to
  • Pak Choy Added to
  • salad cucumber Added to
  • coriander Added to

  • bean sprouts Added to

1. Step

Start by grabbing a pan and adding some sesame oil and chilli oil. Spoon in the curry paste and stir until fragrant.

Now add turmeric and stir to coat.

3. Step

Add the vegetable stock, coconut cream and nori sheet.

4. Step

Once simmering, add the soy sauce, sugar and nut butter and stir to combine. Let it simmer on low heat.

5. Step

Cook the noodles along with the pak choy.

6. Step

Serve the soup in a bowl. Top with the noodles, pak choy, cucumber, fried tofu, bean sprouts, coriander and a squeeze of lime. Finish off with a drizzle of chilli oil and some sesame seeds.
