- 4 ripe tomatoes
- 2 tbls grated parmesan
- 1 a handful grated cheese
- 1 clove garlic
- salt and pepper
- olive oil
Wash and cut the tomatoes in half and place them face up on a tray suitable for the oven.
Finely chop the garlic and spread it over the tomatoes. Season with a bit of salt, pepper and oregano.
Bake the tomatoes in the oven to 180ºC for 30 or 40 minutes.
When roasted, take them out of the oven and raise the oven temperature to 200ºC. Mix Parmesan with a bit of grated cheese. Spread this cheese mixture over the tomatoes and put them in the oven until they are golden brown, about 5 or 10 minutes.
Leave to cool and finish with a sprinkling of freshly chopped basil. Serve and enjoy!
