- 1 chicken
- fine salt
- 1 clove garlic
- 2 carrots
- 2 onions
- 2 stalks celery
- 2 potatoes
- extra virgin olive oil
- 100 ml white wine
Season the chicken with salt and pepper, sprinkling them on top and spreading them evenly. Then insert the dressed garlic clove and a few sprigs of rosemary inside the chicken. Set aside and let it infuse.
In a bowl, cut the carrots, celery, onions and potatoes into small pieces. Season with salt, pepper and olive oil and give it a good stir.
Pour a little extra virgin olive oil on the bottom of a pan and arrange the chicken inside, with the vegetables around it. Add more oil and another sprig of rosemary.
Place in the oven and cook in a fan oven at 180 C for about 90 minutes, remembering to pour the white wine over the chicken halfway through cooking.
Place the chicken on the serving plate accompanied by the vegetables as a side dish. Enjoy!
