- 1.1 kg minced veal
- black pepper
- 5 egg
- 75 ml soy sauce
- 150 ml sweet wine
- 270 ml sunflower oil
- 90 ml Extra Virgin Olive Oil
- orange juice
- lemon juice
- 5 sweet and sour gherkins
- 3 tbsp. smoked ketchup
- brioche bread
- 3 slices cheddar
- 3 slices havarti cheese
Add salt and ground black pepper to the minced beef. Mix well and form into patties. Set aside and leave it out of the fridge for two hours.
For the egg sauce, separate the egg whites from the yolks. Then pour the soy sauce and wine into a bowl with the yolks. Cover and set aside for 3 hours. After this time, whisk until a homogeneous sauce is obtained.
Prepare a pink sauce with sunflower oil and olive oil. Add the egg, and a pinch of salt. Whisk until it has the texture of mayonnaise. Then, add the orange juice, ketchup, lemon juice and gherkins. Mix, stir and set aside.
In a frying pan, add a dash of olive oil, whisk the egg whites and fry in small pieces. When golden brown, remove from the heat.
In a large frying pan without oil, place all the burgers and cook on both sides. Set aside in an ovenproof dish.
Place a slice of Havarti cheese on half of the burgers and a slice of cheddar cheese on the other half. Then place the tray in the oven at 270°C and grill the cheese.
Place the brioche bread in the pan and brown.
Put pink sauce on the bread, then the cheddar burger, another layer of pink sauce, egg sauce and a hamburger with Havarti cheese.
Add fried egg whites and more egg sauce. Top the burger with the other slice of bread. Serve and serve with fries.
