Directions

1. Step

Clean the squid and cut into rings. This step is important, I would recommend buying the squid already cleaned to save time but if you decide to do it yourself, be sure to remove the ink and bone on the inside, these would give a bitter taste to your stew.

2. Step

Chop the onion, garlic, peppers and tomatoes. Remember that a good cut is essential in the kitchen. The idea is to cut everything the same size so that it cooks evenly.

3. Step

In a pan with a little olive oil, sauté the onion, garlic, peppers, tomato and bay leaf until golden brown.

4. Step

Add the squid, the wine, a little salt and pepper. I usually add the wine little by little and let the alcohol evaporate, this enhances the flavor of the ingredients.

5. Step

Let it simmer for approximately 30 minutes or until the squid is tender. If you see that the sauce is getting dry, you can add a little seafood broth or water.

6. Step

When the squid is tender, remove from the heat and sprinkle some fresh parsley on top. This gives an aromatic and fresh touch to the dish.
