- 21⁄2 kg duck
- 7 oranges
- 1⁄2 chicken stock cube
- white pepper
- black pepper
Sear the duck with the help of a blowtorch or direct flame over a fire; to remove all the feathers if there are any.
Rinse it very well, dry it and salt and pepper it perfectly inside and out.
Stuff it with well-rinsed, unpeeled orange quarters, as many as will fit. Then, tie it with a knot at the wings and also the thighs.
Place it in a roasting dish and add the juice of 4 squeezed oranges and some of the chicken stock. Put it in the oven at 200ºC for 10 minutes; then low the heat to 150ºC and cook it for at least 2 and a half hours. Every 25 minutes turn it and baste it with its own broth.
Once the duck is roasted, tender and golden brown, remove the ropes or flanges and place it in a serving dish. Potatoes are a good side dish for roasted duck. Enjoy!
