Peel the onions and cut them into medium-sized cubes.
Peel the carrots and cut them into thin slices. Put the carrots in a pot with water and a splash of vinegar and cook for twenty minutes. Remove, drain and leave to cool in the fridge with a little sunflower or olive oil.
Then mix with the cooked and diced beetroot, the chopped hard-boiled eggs and the onion.
Dress with mayonnaise to taste and season.
