- 4 Habaneros
- 2 cups chopped fresh pineapple
- 1 Cup fresh mango
- 1 tablespoon sugar
- 1 Cup water
- 1⁄2 Cup white or apple cider vinegar
- 1 spoon salt and pepper
- grated lemon zest
- olive or vegetable oil
- 1⁄4 spoon garlic powder
- 1⁄4 spoon onion powder
In a saucepan or frying pan, heat the oil for a few seconds and add the habanero peppers, pineapple and mango, spices and cook for 8 minutes or until the fruit softens a little.
Add vinegar, water and sugar, bring mixture to a boil, reduce heat and simmer for 15-20 minutes.
Remove from the heat, allow to cool for a few minutes and blend the mixture completely until smooth.
The salsa can be kept in the refrigerator for a long time.
