- 4 slices veal
- 4 slices raw ham
- 4 sage
- white wine
- extra virgin olive oil
- fine flour
Place the veal slices on the surface and beat them lightly with the meat tenderizer.
Put a slice of raw ham and a sage leaf on each slice and stop everything with a toothpick.
Pour the flour onto a plate, pass the slices on the flour, just the part without ham and sage, then remove the excess flour.
Pour a knob of butter and 2 tablespoons of extra virgin olive oil into a pan, and melt over low heat.
Place the slices in a pan and brown, them without ever turning them.
When the slices are golden, raise the heat and add the wine, season with salt and pepper and let the alcohol evaporate completely.
Serve the Saltimbocca hot accompanied by the cooking sauce.
